Lemon Bars

I woke up a few days ago with a major craving for Lemon Meringue Pie. Then I looked out the window, fog so thick there should have been a school delay.  So my next thought was LEMON BARS!!  I don’t know why I even wanted to make a pie, it takes way longer because it is so much more work.

Start off by preheating your oven to 375 degrees and grease a 9 x 13 pan.

In a large bowl, I use my mixer, combine:

 1 1/2 c. flour

2/3 c. powdered sugar

3/4 c. softened butter

 Mix until combined and press into greased pan, I try to get it really uniform so it bakes evenly.

Bake for about 20 minutes in the preheated oven until it is nice and golden.

While you are baking the crust make the filling by whisking together:

3 eggs

1 1/2 c. sugar

3 T. flour

1/4 c. lemon juice

Whisk until frothy,

Pour over crust and bake another 20 to 25 minutes, careful not to over cook the edges.

Let cool, dust with powdered sugar and cut into squares.

I am lucky if a pan of lemon bars lasts over 24 hours at my house.  They are such a wonderful rich and tart treat!

Maybe I will get around to a Lemon Meringue sometime, but for now Enjoy!!
